What is in the jar
A 212 ml glass jar holding 180 g net, of which 115 g is drained artichoke. The recipe pairs artichoke halves and quarters with canola oil, distilled vinegar, salt, garlic and spices, plus citric acid as acidifier and ascorbic acid as antioxidant. The spices include mustard, which is worth knowing if you cook for someone with an allergy.
